Cornflake Cookies



Material
225g Butter, softened at room temp.
125g caster sugar
300g All-purpose-flour, sifted
1 Egg
2 C. Corn flakes

How to make
1. Pour 2 cups of corn flakes into a zip lock bag and crush corn flakes into small bits. Place in a bowl and set aside.
2. Cream butter and sugar Until light and fluffy.
3. Add egg and mix well.
4. Fold in sifted flour with a spatula. When the dough starts to get too Difficult to manage with the spatula, knead the dough with your hands (please wash your hands before handling the dough!).
5. Roll dough into tiny balls and set aside (I found this method is more tedious. Skip this and go to step 6   instead).
6. Pinch approx. 1 tsp worth of cookie dough and place it in a bowl filled with crushed corn flakes from  

    Step 1.
7. Coat the dough with corn flakes and roll into tiny balls.
8. Bake in pre-heated oven set at 200C for approx. 25-30 mins. Until or browned.
9. Leave cookies to cool in a cooling rack and stack Them in airtight boxes once cooled.
